Honey and Spice Glazed Chicken
INGREDIENTS:
(2) Tablespoons olive oil
1/4 Cup sherry or red wine vinegar
1/4 Cup honey
3/4 Tablespoon ground cumin
(1) Teaspoon fennel seeds
1/2 Teaspoon ground cinnamon
1/2 Teaspoon salt
(1) 3-1/2 Pound roasting chicken, split and washed
Freshly ground
pepper to taste
STEPS:
Follow grill planking instructions. In
a small saucepan, combine the olive oil, sherry, honey, ground
cumin, fennel
seeds and cinnamon. Bring to a boil
then simmer until the mixture thickens (about 3 minutes).
Place the chicken halves on to the grill plank. Brush the
glaze
mixture generously over the top and sides of the chicken.
Grill until the juices run clear when the thighs are pierced
with a sharp knife.
