Garlic Butter Chicken Breasts
INGREDIENTS:
1/4 Cup unsalted butter, at room temperature
(4) Large cloves garlic, finely chopped
(2) Tablespoons snipped fresh chives
Salt and freshly ground pepper
(4) Bone-in chicken breast halves
(2) Tablespoons dry white wine
Makes 4 servings.
STEPS:
Prepare grill planks as in instructions.
In a saucepan, using a fork, mash together the butter, garlic,
chives, and 1/2 teaspoon each salt and pepper. Using your
fingers, carefully loosen the skin on each chicken breast
and insert about 1 1/2 teaspoons of the garlic butter under
the skin, spreading it as evenly as possible. Add the wine
to the remaining butter mixture and place over low heat
until melted. Set aside. Prepare a charcoal or gas grill.
Place the chicken breasts, skin side down, on the grill
planks. Turn chicken once or twice for 10 minutes. Brush
the chicken with some of the melted butter mixture. Continue
cooking, turning occasionally and brushing with more of
the butter mixture, until the juices run clear with the
thickest part of the breast, away from the bone, is pierced
with a knife tip, about 10 minutes longer. Serve the chicken
breasts hot, either whole or carved off the bone.
