Planked Trout Almondine
INGREDIENTS:
(4) trout fillets, 6 to 8 oz. each
Olive oil
Salt and pepper
2/3 Stick of butter
Sliced almonds
Seedless grapes (either green or red), sliced in half lengthwise
1/2 -3/4 Cup Amaretto
Serves 4.
STEPS:
Prepare grill plank as in instructions.
Brush olive oil on the fillet and season with salt and pepper
to taste. Place trout fillets on preheated plank, skin side
down and cook until meat turns opaque in color and flakes
easily with a fork (approximately 10 - 15 minutes), depending
on size of trout. Do not overcook and do not turn. In a
small skillet, melt butter and then toast almond slices
in butter over low heat. When nearly done add Amaretto and
reduce until thickened. When fillets are done, place on
individual plates and spoon melted butter mixture over the
fillets and garnish with grapes. This sauce is excellent
on other fish.
