Planked Cod, Boston Style
INGREDIENTS:
(4) Tablespoons butter
3/4 Cup bread crumbs
(1) Teaspoon onion salt
(1) Teaspoon dry mustard
(1) Teaspoon Worcestershire sauce
Dash of Tabasco sauce
(2) Tablespoons lemon juice
(1) Tablespoon parsley, finely chopped
(4) Cod fillets, 1/2-pound each
Serves 4
STEPS:
Prepare grill plank as in instructions.
Melt the butter in a small saucepan and combine the bread
crumbs, onion salt, mustard, both sauces, lemon juice and
parsley. Place the cod fillets onto the preheated plank.
Spoon the bread crumb mixture on top of each and pat down
to hold in place. Cook for 20 to 25 minutes or until the
fish flakes when prodded with a fork and the topping is
lightly browned.
