Pork Loin with Apricots
INGREDIENTS:
(1) 2-1/2 pound loin of pork
(8) Dried apricots, soaked in apricot brandy or cognac for
30 minutes
(4) Tablespoons butter, softened
Salt and freshly ground pepper
to taste
1/3 Cup each apricot jam, strained and Dijon mustard mixed
together
STEPS:
Follow grill planking instructions.
Make 8 even incisions
along the loin of the pork and stuff an apricot into each
of them. Set it aside for 1 hour.
Rub the pork liberally with
butter, salt, and pepper. Place it onto the grill plank and
grill for 1 1/2 to 2 hours. About
30 minutes before the roast is finished, coat it generously
with the mixture of apricot jam and mustard. When the roast
is done, let it rest in a warm place for 15 minutes before
carving.
